Guacamole with Cili Jeruk

Traditional guacamole is given a kick with pickled chillies - making it an even more addictive dip for all sorts of chips.


Serves 2

Ingredients:


2 ripe avocados

Juice of one lime, or 1 tablespoon of fresh lime juice

¼ teaspoon fine salt

2 teaspoons, coriander, roughly chopped

4 cherry tomatoes, diced

1 red shallot, peeled and diced

1 tablespoon pickled green chillies, roughly chopped


Method:

  1. Cut the avocadoes into halves, remove the seeds, then use a spoon to scrape the flesh into a medium bowl.
  2. Add the lime just and salt, and mash together until smooth. 
  3. Add the remaining ingredients and stir till evenly combined.
  4. Serve with your choice of chips or vegetable sticks.

Tip: Guacamole must be made and  eaten immediately as the avocado will begin to discolour due to oxidation.
